If your BBQ has a drip tray make sure it is emptied and replaced on a regular basis to prevent the grease and oil build up from catching fire. If your tray isn’t stainless steel or galvanized you should line it with tin foil first, then cover with a layer of crushed pumice to a level of about 5mm (avoid sand as it doesn’t really absorb fat well).
